Our company mainly deals with the production of Evo oil (as well as wine in limited production).
Ours is an emerging company in the agricultural sector, but has years of experience, as my father, owner of the whole, since he was a boy with his father, has nourished the passion in the sector, helping him in small jobs.
Our harvest is the result of many varieties of olives, including: leccino, rustic, gentile, straight and intosso (best oil ever, but subject to oil fly). The harvest does not have a precise period, but varies according to the beginning of veraison, or when the olive begins to color; our crops take place in a natural way, without the use of chemical fertilizers, and therefore through the exclusive use of cages.
The milling takes place at low temperature with a steel press, not above 25-26 degrees, as polyphenols (antioxidants that fight free radicals and are good for our body) die.
It is stored in stainless steel containers, away from light and heat sources.
